Dom Deluise's Frittatas

Dom Deluise joined old friend and cohort, Burt Reynolds, and Roseanne in the kitchen for this dish.

Frittata

1/2 teaspoon olive oil
2 garlic cloves, minced 1 onion, chopped 4-6 mushrooms, sliced 4 eggs (or egg equivalent) 2 tsp. grated cheese Add oil to a Teflon pan. Sauté garlic, onion, pepper and mushroom until limp, about 5 minutes.

In a bowl, beat eggs and grated cheese. Add vegetables and then mix in eggs. Spray the pan with olive oil and reheat. Add the egg mixture and cook on low for about 8 minutes. Turn once by putting a plate over the pan, turn pan and plate over, then slip frittata back in pan. Cook on the other side for an additional 1 or 2 minutes, then serve. Serves 2.

Alternate Preparation: Cook top of frittata by sliding uncovered pan under the broiler for 2 minutes. When you use this method you can add a slice of any of your favorite cheese. When cheese bubbles a little, remove from broiler, slide onto a plate and enjoy!
